The September, 2007, issue of Southern Living magazine has what appears to be an extraordinary recipe for “Creamy Grits Casserole.” It includes both sharp cheddar and smoked Gouda cheeses, and I went to sleep last night dreaming about it.
(Note to self: must also try the “collard green pesto” soon.)

I love the fact that one of the contextually-sensitive ads in the right-hand column is for “Grit Blasting.”
